Weight Watchers Wednesday (Early)

I'm posting Weight Watchers Wednesday a day early for those of you who need a little encouragement before the holiday. Here are some keys for not over-indulging: it's a holi-day, not a holi-week; you CAN take just a bite of everything; it's okay to say no; don't got to the party hungry.

Did you know that a slice of pecan pie is worth 12 points? Because many of you might not be familiar with what points mean, I'll put it in perspective. I'm only supposed to have about 18 points in an entire day. Green bean casserole is usually 5 points per cup. Pumpkin and apple pie are worth 9 points per slice. A 4 oz. glass of wine-- 2 points. I don't know about you, but my glass is usually holding a bit more than 4 oz! So... as you can tell, it all starts to add up. In our meeting this week, we figured a traditional Thanksgiving dinner and dessert can be around 32 points!

I'm not saying you can't eat what you want on Thanksgiving. The key is to have just a bite or two of each thing... not a full helping. If you follow that rule, then you won't feel like you've deprived yourself of that Thanksgiving goodness, and you will have kept yourself from over-indulging.

Here's a Weight Watchers recipe to save you a few points:

Ginger-spiced Pumpkin Pie

Ingredients

  • 1 large egg(s)
  • 1/3 cup(s) sugar
  • 1/4 tsp table salt
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 15 oz canned pumpkin
  • 3/4 cup(s) fat-free evaporated milk
  • 6 oz pie crust, 9-inch, unbaked

Instructions

  • Preheat oven to 425°F. In a large bowl, lightly beat egg. Stir in sugar, salt, cinnamon, vanilla, ginger and nutmeg. Add pumpkin and evaporated milk. Stir until well combined. Pour into pie shell.

  • Bake for 15 minutes. Reduce heat to 350°F and bake until toothpick inserted into center comes out clean, about 25 minutes. Cool for 1 hour before serving.

Did you know that 1pt is around 50 calories?! Just an easier way to figure points out if you have no other way.
